Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken and brown on both sides until golden. Remove from the skillet and set aside.
  • In the same skillet, add chopped onion and garlic. Sauté until fragrant and translucent.
  • Add rice to the skillet and toast for 2-3 minutes, stirring frequently.
  • Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  • Return chicken to the skillet, cover tightly, and reduce heat to low. Simmer for 20-25 minutes or until the rice is tender and the chicken is cooked through.
  • Stir in grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.
  • Garnish with chopped parsley before serving.
