Ingredients
  

Vegetables

  • 14 ounce coleslaw mix
  • 0.5 cup red pepper diced
  • 0.5 cup black beans drained and rinsed
  • 0.5 cup corn grilled or skillet-charred
  • 0.5 cup cilantro chopped
  • 1 jalapeño minced

Dressing

  • 0.75 cup mayo
  • 0.25 cup sour cream
  • 1.5 Tablespoons taco seasoning
  • 2 Tablespoons lime juice

Instructions
 

Preparation

  • In a large mixing bowl, combine coleslaw mix, red pepper, black beans, grilled corn, cilantro, and jalapeño.
  • In a separate small bowl, combine mayo, sour cream, taco seasoning, and lime juice.
  • Add mayo mixture to coleslaw mixture and stir to combine.
