Ingredients
  

For the banana bread

  • 2 cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup raw or turbinado sugar
  • ¼ cup butter, melted
  • 2 large eggs, at room temperature
  • 1 ½ cups mashed ripe banana
  • ¼ cup plain low-fat yogurt
  • 3 tablespoon dark rum
  • ½ teaspoon vanilla extract
  • ½ cup sweetened flaked coconut divided
  • 1 tablespoon sweetened flaked coconut for topping

For the lime glaze

  • ½ cup powdered sugar
  • 1 ½ tablespoon freshly squeezed lime juice

Instructions
 

Preparation

  • Preheat the oven to 350F.
  • In a bowl, mix together all-purpose flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, mix together raw sugar and melted butter using an electric mixer. Then, add eggs, one at a time. Beat after each addition.
  • Add mashed bananas, low-fat yogurt, dark rum, and vanilla extract to the wet ingredients. Beat until completely combined. Then, add the dry ingredients. Mix on low speed until just combined.
  • Stir in ½ cup sweetened flaked coconut. Don't overmix the batter.
  • Grease a 9x5 inch loaf pan with non-stick cooking spray and line with parchment paper. Transfer the banana bread batter to the prepared pan. Top with an additional 1 tablespoon sweetened flaked coconut.
  • Bake in the preheated oven for 60 minutes or until ready. Check with a toothpick inserted in the center; if it comes out clean, the bread is ready.
  • If the bread is golden brown but still not ready inside, cover it with aluminum foil.
  • While the bread is baking, prepare the lime glaze. In a bowl, mix together powdered sugar and lime juice. Set aside.
  • Remove the banana bread from the oven and let it cool on a cooling rack. Then, remove the bread from the pan. Drizzle with lime glaze and let it cool completely. Slice and enjoy!

Notes

For best results, use ripe bananas for a sweeter and more flavorful banana bread.
