Ingredients
  

Protein

  • 1 ½ cup cooked chicken shredded or chopped
  • ½ cup ham diced or chopped (smoked ham if available)

Fruits & Vegetables

  • ½ cup pineapple chunks diced
  • 1 piece scallion diced

Condiments

  • 2 tablespoon mayonnaise or more to taste

Seasoning

  • ¼ teaspoon salt to taste
  • ¼ teaspoon pepper to taste

Serving Options

  • Bread, wraps, crackers, or lettuce

Preparation

  • Combine the chicken, pineapple, ham, mayonnaise, and chopped scallion in a large bowl and mix well. Season with salt and pepper, if desired. Serve in a sandwich, in lettuce wraps, in a wrap, or with crackers.

Notes

Use rotisserie chicken, leftover cooked chicken, or drained cooked chicken. If using canned pineapple, ensure it's packed in water or pineapple juice, not syrup. Optional add-ins include celery, bell peppers, herbs, cheese, hot sauce, almonds, grapes, cranberries, and citrus juice.
