Soup Ingredients

  • 1500 grams Tomatoes Use ripe, seasonal tomatoes or canned.
  • 2 tablespoons Balsamic vinegar
  • 2 tablespoons Olive oil
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 2 units Red onions Finely chopped
  • 2 cloves Garlic Finely chopped
  • 125 grams Fresh basil leaves Not chopped
  • 2 teaspoons Tomato paste
  • 8 cups Vegetable or chicken broth
  • 125 milliliters Cream
  • Salt & black pepper To taste
  • Fresh basil To serve

Grilled Cheese Ingredients

  • 2 slices Bread Per person
  • 2 cups Grated mozzarella
  • 2 cups Grated mature cheddar
  • Butter

Instructions
 

Soup Instructions

  • Preheat the oven to 200°C/390°F.
  • Place the tomatoes in a roasting tray and add balsamic vinegar, olive oil, sugar, and salt. Stir and roast for 25-30 minutes until caramelized.
  • Sauté the onions in olive oil in a large pot until translucent. Add garlic and basil, and fry for another minute.
  • Add the roasted tomatoes, tomato paste, and stock. Stir and simmer for 10 minutes.
  • Blend the soup until smooth, then add cream and season to taste.

Grilled Cheese Instructions

  • Mix mozzarella with cheddar. Place cheese on half of the bread slices, top with remaining slices, and butter both sides.
  • Cook in a non-stick pan over medium heat until golden brown and cheese is melted.
  • Serve the tomato soup with a drizzle of cream and fresh basil, along with grilled cheese sandwiches.

Notes

Roasting the tomatoes with aromatics builds great flavor. Using quality ingredients like balsamic vinegar pairs well with tomatoes.
