Ingredients
  

  • 1 pound lean ground beef
  • 1 pound ground lamb
  • 1 red onion peeled and quartered
  • 3 Tablespoons avocado oil
  • 2 Tablespoons minced garlic
  • 4 teaspoons dried oregano
  • 1 Tablespoon dried thyme
  • 1 Tablespoon kosher salt
  • 2.5 teaspoons ground cumin
  • 2 teaspoons ground black pepper
  • 1 teaspoon coriander
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground sage
  • 1 teaspoon ground sumac optional

Instructions
 

  • Preheat the oven to 350°.
  • Place all ingredients into food processor.
  • Pulse until things start coming together and then switch to high.
  • Press the meat mixture tightly into a 10"x5" loaf pan.
  • Bake at 350° for 45 – 60 minutes, testing at the 45 minute mark.
  • Let the meat rest for 15 or 20 minutes on a cooling rack.
  • Slice the gyro meat when cool, about ⅛" thick.
  • Reheat the thinly sliced gyro meat using the preferred method.
  • Assemble the sandwiches with meat, onions, tomatoes, lettuce, and tzatziki on warm pita bread.

Notes

Thinly sliced gyro meat can be reheated by air frying, microwaving, broiling, or pan frying.
