Creamy Tomato Soup with Cheddar Dumplings

For the soup
- 1 TBS butter
- ½ medium onion, peeled and chopped
- 1 ½ TBS flour
- 1 ½ cups chicken stock 360ml
- 1 tin chopped tomatoes in tomato juice 14oz/425g
- ½ teaspoon sugar
- salt and black pepper to taste
For the dumplings
- ½ cup plain all purpose flour 70g
- ½ teaspoon baking powder
- fine sea salt and coarse black pepper to taste
- ¼ teaspoon garlic powder not salt
- ¼ teaspoon onion powder not salt
- 2 TBS cold butter
- 4 TBS grated sharp cheddar cheese plus extra to sprinkle, optional
- ¼ cup milk 60ml
Soup Preparation
Melt the butter in a saucepan. Add the onions. Cook, stirring occasionally, over medium heat until softened and translucent without coloring.
Whisk in the flour and cook for a minute, stirring constantly.
Add the chicken broth slowly, along with the undrained tomatoes. Stir and bring to the boil, then reduce to a simmer. Add the sugar. Season to taste with salt and pepper.
Dumpling Preparation
Whisk the flour, baking powder, salt, and powders together in a bowl. Drop in the butter and cut it in with a pastry blender until the mixture looks like crumbs with some small bits and some larger bits. Stir in the cheese.
Add the milk and stir it in to give you a soft dough. Drop by the spoonful on top of the simmering soup.
Cover tightly and cook at a slow simmer for 10 to 12 minutes without peeking. They should be soft and fluffy with holes on top when done.
If desired, sprinkle a bit more cheddar over top and allow it to melt before ladling the soup and dumplings into heated bowls.
