Ingredients
  

Chicken Filling

  • 4 skinless, boneless chicken breast halves cooked and shredded
  • 1.5 cups shredded smoked Cheddar and Swiss cheese blend
  • 1 can green salsa 7 ounces
  • 1 cup chopped onion

Taquito Wrapping

  • 20 pieces corn tortillas 6 inches
  • 1 quart peanut oil for frying, or as needed

Optional Dips

  • 1 cup sour cream Optional
  • 1 cup chunky salsa Optional
  • 1 cup guacamole Optional

Cooking Instructions

  • Heat oil in a deep-fryer to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the shredded chicken, cheese, green salsa, and onion. Spoon about 1 ½ tablespoons of the mixture onto tortillas. Roll them up so each one is about 1 inch wide. Secure rolls with toothpicks.
  • Fry rolls 4 or 5 at a time for 3 to 5 minutes, or until golden brown. Drain on paper towels. Serve with sour cream, salsa, and guacamole for dipping.

Notes

Thinner corn tortillas work best for this recipe.
