Ingredients
  

  • 6 Tbsp. unsalted butter
  • 1 large yellow onion, chopped (about 3 cups)
  • ½ tsp. freshly ground black pepper
  • 1 ½ tsp. kosher salt divided
  • 6 medium garlic cloves, finely chopped (about 2 Tbsp.)
  • ½ tsp. crushed red pepper
  • 1 can tomato paste (6-oz.)
  • 8 cups chicken broth
  • 3 medium Yukon Gold potatoes, scrubbed and chopped (about 3 cups)
  • 1 pkg. frozen baby lima beans (15-oz.)
  • 1 can fire-roasted diced tomatoes (14.5-oz.), undrained
  • 1 pkg. frozen corn (10-oz.)
  • 6 sprigs fresh thyme (4-in.)
  • 2 leaves fresh bay leaves (optional)
  • 3 cups shredded rotisserie chicken (from 1 chicken)
  • 2 cups pulled smoked pork
  • ½ cup barbecue sauce
  • 1 tsp. Worcestershire sauce
  • 1 tsp. apple cider vinegar

Instructions
 

Cook onion, then garlic and seasonings

  • Melt butter in a large Dutch oven over medium. Add onion, black pepper, and ½ teaspoon of the salt; cook, stirring occasionally, until onion is softened and translucent, 6 to 8 minutes. Add garlic and crushed red pepper; cook, stirring constantly, until fragrant, about 1 minute.
  • Add tomato paste; cook, stirring often, until darkened in color, about 3 minutes.

Add broth and vegetables

  • Stir in broth, potatoes, lima beans, diced tomatoes, corn, thyme sprigs, and bay leaves.
  • Bring to a boil over high, stirring occasionally and scraping up any browned bits on bottom of Dutch oven. Reduce heat to medium-low to maintain a simmer; simmer, stirring occasionally, until potatoes are just tender, 10 to 12 minutes.

Add meat, barbecue sauce, and Worcestershire

  • Stir in chicken, pork, barbecue sauce, and Worcestershire; return to a simmer over medium-low; cook, stirring occasionally, until flavors have melded and stew has thickened slightly, 10 to 12 minutes. Remove from heat and stir in vinegar.
